Nachos with cheese, beans and grilled chorizo sausage topcook.tomathouse.com
Ingredients:
- 200 gr. nachos corn chips
- 60g cooked chorizo sausage, quartered lengthwise and cut into 1cm thick pieces.
- 180 g of grated Cheddar
- 180 g of grated Monterey Jack cheese
- 1 cup refried beans
- 4 tbsp chopped cilantro leaves
- 4 tbsp. l. guacamole
- 4 tablespoons chopped pickled jalapeño peppers
- 4 tablespoons salsa
- 4 tbsp sour cream
- Special equipment: strong aluminum foil
Preparation:
- Preheat the grill to medium-low heat. Cut 4 pieces of foil, each 18 inches long, and lay them on the work surface, shiny side up, with the long side facing you. Spray the foil evenly with cooking spray.
- Place a quarter of all the chips on the left side of 1 piece of foil, sprinkle with a quarter of the sausage and both types of cheese. Place a quarter on top. refried beansCover with the empty side of the foil and seal the edges to form a parcel. Repeat with the remaining ingredients to make 4 identical foil parcels.
- Place them on the grill, cover, and grill for 12 to 15 minutes until the cheese is melted and the chips are hot.
- Transfer the parcels to a large platter. Carefully, to avoid being burned by the steam, unfold the foil and sprinkle each portion with 1 tablespoon of cilantro, then top with 1 tablespoon of guacamole, jalapeno, salsa and sour cream.
