Grilled duck breast with spices topcook.tomathouse.com
Ingredients:
- 1 tbsp. l. smoked paprika
- 1 teaspoon garlic powder
- 1 tsp ground cumin
- 1 teaspoon chili powder
- 0.5 tsp 5-spice seasonings
- 0.5 tsp dry mustard
- 4 duck breast halves
- Vegetable oil, for frying
Preparation:
- In a bowl, combine smoked paprika, garlic powder, cumin, chili powder, five-spice seasoning, dry mustard, and a little salt and black pepper. Using a sharp knife, score the duck skin to create a 0.5 cm mesh pattern. Rub the spice mixture all over the duck.
- Preheat the grill to medium heat (don't let it get too hot, as the duck will cook slowly to render the fat) and wipe the grates with a paper towel dipped in vegetable oil. Place the duck skin-side down on the grill and grill until seared and the fat has rendered, 4 to 5 minutes. If the drippings flare up, move the duck to a different area away from the heat. Turn the duck over and transfer it to a cooler area of the grill. Grill for another 5 minutes for medium-rare. Let rest for 5 to 7 minutes, then slice across the grain into thick slices.
