Spring mini pizzas topcook.tomathouse.com
Ingredients:
- 450 g ready-made pizza dough, room temperature (For the pizza dough recipe, see here.)
- Flour
- Olive oil
- 170 g coarsely chopped green onions
- Coarse salt
- 1 tbsp. ricotta cheese
- 1 teaspoon finely grated lemon zest
- Coarse sea salt
- Coarsely ground black pepper
- 1/4 cup fresh leaves basilica
- Grated Parmesan cheese, for sprinkling
Preparation:
- Preheat oven to 250°C. Divide the dough into 4 pieces and roll each piece out on a floured work surface into 15 cm (6 in) rounds. Grease a baking sheet with olive oil. Place the dough pieces on the baking sheet and bake until golden brown, about 12 minutes.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add green onions and sprinkle with coarse salt. Cook in the skillet, covered, for 1 minute.
- In a bowl, combine ricotta cheese, lemon zest, and 1 tablespoon olive oil. Brush the baked crusts with olive oil, then top with the cheese mixture. Sprinkle with sea salt and coarsely ground black pepper. Top with green onions. Return pizzas into the oven and continue baking for another 2 minutes.
- Sprinkle hot mini pizzas with basil leaves, Parmesan cheese and drizzle with olive oil.
