Cupcakes with orange glaze

Ingredients:

    For muffins:

  • Butter, for greasing the pans
  • 240 g butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups premium wheat flour
  • 1 cup buttermilk
  • 1 teaspoon of baking soda
  • The zest of two oranges

    For the orange glaze:

  • 1 cup brown sugar
  • Juice of two oranges

Preparation:

  1. Preheat oven to 190°C. Grease round baking pans with butter. mini cupcakes.
  2. Prepare muffins: Beat the butter and granulated sugar with a mixer. Add the eggs and continue beating for about 4 more minutes.
  3. Sift the flour and add it to the egg mixture, stirring until smooth. Don't over-mix the dough, or the muffins will be tough.
  4. Mix the buttermilk and baking soda and add to the dough, stirring. Add the orange zest and stir again.
  5. Fill prepared pans two-thirds full with batter and bake for 12-17 minutes, until golden brown.
  6. Prepare the glaze: Mix orange juice with brown sugar. Then pour the glaze over the hot muffins.
