Baked Fusilli Pasta with Cheese topcook.tomathouse.com
Ingredients:
- 350 g of pasta fusilli or other spiral-shaped pasta
- 1 tbsp (15 g) butter
- 1 medium shallot, finely chopped
- 2 tbsp. flour
- 1 teaspoon mustard powder
- 1/2 cup low-fat milk (0.5% fat)
- 1/3 low-fat sour cream
- 2/3 tbsp. grated mozzarella cheese
- 2/3 cup grated Swiss cheese
- 3 tbsp. l. grated parmesan cheese
- Freshly ground pepper
- 1/4 cup chopped parsley, basilica or chives
- Salt
Preparation:
- Bring a saucepan of salted water to a boil. Add the fusilli pasta and cook for the amount of time indicated on the package. Set aside 3/4 cup of the stock for the sauce, and discard the remaining liquid.
- Melt the butter in another saucepan over medium-high heat. Add the shallots and cook, stirring, until slightly softened, about 2 minutes. Add the flour and mustard powder and continue cooking, stirring, for another minute. Pour in the milk, stirring constantly, and the remaining broth and cook, stirring, until the sauce thickens, about 2 minutes.
- Reduce heat to medium. Stir in sour cream, mozzarella, Swiss cheese, and 1 tablespoon Parmesan cheese. Continue cooking, stirring, until the cheese melts, about 1 minute. Add the pasta, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper. Transfer the pasta and sauce to a baking dish.
- In a bowl, combine the remaining 2 tablespoons Parmesan, chopped herbs, and salt and pepper to taste. Sprinkle the mixture over the pasta and bake in a preheated oven until golden brown, about 2 minutes.
