Ingredients:
- 4 skinless, boneless chicken breasts, lightly pounded to an even thickness
- Olive oil or butter for greasing the pan and chicken
- 1.5 tbsp. breadcrumbs with Italian herbs
- 1/4 tbsp. grated parmesan
- 1 tbsp. pesto sauce for pizza
- 4 pieces of mozzarella, 0.5 cm thick.
Preparation:
- Preheat oven to 190°C. Line a baking sheet with parchment paper or non-stick aluminum foil and grease with oil.
- Season each chicken breast with salt and pepper and rub with oil. In a shallow bowl, combine the breadcrumbs and Parmesan cheese. Coat the chicken in the breadcrumbs, shake off any excess, and arrange on the prepared baking sheet.
- Bake for 20–25 minutes, until the juices run clear. Turn the chicken pieces over halfway through baking.
- Remove the cooked chicken breasts from the oven and turn on the grill function. Spread pizza sauce evenly over each chicken piece and top with a slice of mozzarella. Return the baking sheet to the oven under the grill element and grill until the cheese is melted and bubbly. Serve.
