Pumpkin Chocolate Chip Cookies topcook.tomathouse.com
Ingredients:
- 220 g softened butter
- 1 cup white sugar
- 1 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tbsp. pumpkin puree
- 3 cups premium flour
- 2 teaspoons of baking soda
- 0.5 tsp salt
- 1 teaspoon ground cinnamon
- 0.5 tsp ground ginger
- 0.25 tsp ground nutmeg
- 0.25 tsp ground cloves
- 350 g chocolate chips
- Non-stick cooking spray or parchment paper
Preparation:
- Preheat oven to 350°F (170°C). Spray baking sheets with cooking spray or line them with parchment paper.
- Using a mixer, beat the butter until soft. Gradually add the egg whites and brown sugar and beat until the mixture is fluffy and airy. Add the eggs one at a time and beat until combined, then add the vanilla and pumpkin puree.
- In a large bowl, combine the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Slowly add the flour mixture, whisking constantly. Stir in the chocolate chips. Drop the batter onto the baking sheet by the tablespoonful and bake for 15-20 minutes, until the edges are golden brown.
Remove the cookies from the oven and let them rest for 2 minutes. Use a spatula to remove the cookies from the baking sheet and let them cool on a wire rack.
