Creamy Pumpkin Cider Dip topcook.tomathouse.com
Ingredients:
- 120 g of cream cheese, fluffed
- 4 slices bacon, chopped
- 2 tbsp (30 g) butter
- 2 tablespoons of wheat flour
- 1 clove garlic, minced
- 1 bottle of hard cider (500 ml)
- 1/2 cup pumpkin puree
- 1 teaspoon Dijon mustard
- 1 tsp Worcestershire sauce
- 1/4 teaspoon pumpkin pie spice
- A pinch of cayenne pepper
- 3 tbsp. grated cheddar (about 340 g)
- Chopped chives for garnish
Preparation:
- Cook the bacon in a medium skillet over medium heat.Cook, stirring occasionally, until browned and crispy, about 7 minutes. Transfer to a paper towel-lined plate to drain.
- Melt the butter in a medium saucepan over medium heat. Stir in the flour and garlic; cook, stirring, until combined, about 2 minutes. Add the cider, pumpkin puree, mustard, Worcestershire sauce, 1/2 teaspoon salt, pumpkin pie spices and cayenne pepper. Stir, bring to a boil, and cook until thickened, stirring occasionally, about 3 minutes.
- Gradually whisk in the cream cheese and cheddar until melted and smooth, about 2 minutes. Transfer the dip to a bowl and top with bacon and onions.
Serve the pumpkin cottage cheese dip with sliced apples or raisins.
