Ingredients:
- 2 large sweet potato with peel
- 2 cloves of garlic
- Salt and freshly ground pepper
- 1/3 cup mayonnaise
- 1.5 tbsp. l. olive oil
Preparation:
- Place the potatoes on a baking sheet, pierce them with a fork in several places, and place in an oven preheated to 190°C.
Bake sweet potatoes until tender, about 50 minutes.
- Sprinkle the garlic with salt and crush it with a knife blade, then grind it into a pulp.
Combine the garlic and mayonnaise in a saucepan, whisking constantly. Gradually pour in the olive oil and season with pepper. Add 2 tablespoons of water if needed.
- Cut the potatoes in half, sprinkle with salt and pepper, and brush with aioli sauce.
