Grilled steak with berry barbecue sauce

Ingredients:

  • 6 beef strip steaks (230 to 280 g each)
  • 2 tbsp. l. olive oil
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/4 cup bourbon (corn whiskey)
  • 1.5 cups blueberries
  • 1 cup blackberries
  • 1/4 cup tomato sauce
  • 2 - 4 tbsp. l. brown sugar
  • 1 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 chipotle chili pepper in adobo sauce, coarsely chopped
  • 2 sprigs of thyme
  • 1 tbsp (15 g) butter

Preparation:

  1. Preheat the grill to medium-high heat. Grease the grates with oil.

    Making BBQ sauceHeat the olive oil in a medium saucepan over medium heat. Add the shallot, garlic, cumin, and coriander. Cook, stirring occasionally, until the onion softens, about 3 minutes.

    Add the bourbon and cook until the liquid is reduced by about half, about 1 minute. Add 1/2 cup water, blueberries, blackberries, ketchup, 2 tablespoons brown sugar, vinegar, soy sauce, chili powder, thyme sprigs, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until thickened, 20 to 25 minutes. Remove from heat and stir in the butter. Season with salt and pepper; add the remaining 2 tablespoons brown sugar if the sauce is too tart.
  2. Pat the steaks dry and season with salt and pepper. Grill for 5 to 6 minutes per side for medium-rare. Transfer to a plate and let rest for 10 minutes.

    Pour the steak juices into the barbecue sauce; thin with water if necessary. Serve the steak with berry barbecue sauce or chimichurri sauce.
