Cajun Rotelle Pasta with Cheese topcook.tomathouse.com
Ingredients:
- 350 g of Rotelle pasta
- 2 tbsp. l. olive oil
- 180 gr. andouille sausages, cut into cubes
- 2 bunches of green onions, cut into rings
- 1 sweet pepper, diced
- 1 tablespoon Cajun seasoning
- 2 tablespoons of wheat flour
- 2 cups of milk
- 230 g of mature cheese Cheddar, cut into small cubes
- Coarse salt
Preparation:
- Bring a saucepan of salted water to a boil. Add the Rotelle pasta and cook for 1 minute less than the package directions. Set aside 1 cup of the stock for the sauce, and discard the remaining liquid.
- Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook, stirring, for about 2 minutes. Add the green onions and bell peppers and continue to cook until the vegetables are slightly softened, about 3 more minutes. Cajun seasoning, flour and cook, stirring, for another 2 minutes. Gradually pour in the milk and cook, stirring, until the sauce thickens and becomes smooth, about 5 more minutes.
- Add the macaroni, cheese, and remaining broth to the skillet. Reduce the heat and simmer, stirring occasionally, until the cheese melts, about 1 minute.
