Ingredients:
Crispy Chicken:
- 900 g boneless chicken fillet
- 3 tbsp. panko breadcrumbs
- 3 tablespoons ancho chili powder
- 2/3 cup buttermilk
- 1.5 tsp hot sauce
- 1.5 tsp coarse salt
- 1/2 tsp granulated garlic
- 1/2 tsp granulated onion
- Vegetable oil for frying
- 2 cups of flour
- 2 tsp smoked paprika
- Salt and crushed black pepper
- 3 eggs category CO
Hot Maple Butter:
- 3 tbsp. maple syrup
- 3 tsp hot sauce
- 1/4 tsp cayenne pepper
- 8 tbsp (110 g) softened butter
Waffles:
- 1/2 cup mineral water
- 2 tablespoons of vegetable oil
- 3/4 tsp vanilla extract
- 2 eggs category CO
- 1 and 1/4 cups buttermilk
- 2 cups of flour
- 2 tablespoons of sugar
- 1/2 teaspoon table salt
- 1/2 teaspoon baking soda
- 1 cup chopped shallot
- Cooking spray
- 4 physalis, peeled and thinly sliced, for serving
Preparation:
- For the chicken: In a small bowl, combine the buttermilk, hot sauce, salt, granulated garlic, and granulated onion. Place the chicken in a heavy-duty plastic bag and pour in the marinade. Marinate in the refrigerator for at least 2 hours or overnight.
- In a baking dish, add flour, paprika, a little salt, and pepper. In another dish, add panko, ancho chili powder, a little salt, and pepper. In a third dish, beat the eggs.
- Remove the chicken from the marinade and let any excess buttermilk drain. Then coat the chicken first in flour, then in eggs, and finally in breadcrumbs.
In a large cast iron skillet, heat oil to a depth of 2.5 cm (1 1/2 inches) and fry the chicken in batches for 3-4 minutes per side, being careful not to crowd the pan, until golden brown and the internal temperature reaches 160°F (71°C) on a candy thermometer.
Preheat the oven to 90°C (195°F) and place racks on two baking sheets. Transfer the fried chicken to one of the prepared baking sheets and place it in the warm oven to keep the chicken warm and crispy while you bake the waffles.
- For the spicy maple syrup butter: In a bowl, mix the butter, maple syrup, hot sauce and cayenne pepper.
For waffles: In a medium bowl, combine the vegetable oil, vanilla extract, and eggs. Add the buttermilk and mineral water. In a separate bowl, combine the flour, sugar, table salt, and baking soda. Add the dry ingredients to the wet ingredients and mix until smooth. Add the onion.
- Preheat the waffle iron according to the manufacturer's instructions. Spray the waffle iron with a light coating of cooking spray. Pour the batter into the waffle iron and bake the waffles until golden brown. Place them on another prepared baking sheet and bake in a warm oven until serving.
- To assemble the sandwiches: Spread each waffle with a generous amount of hot butter. Top with a few tomatillo slices, then a few pieces of crispy chicken. Top with another waffle, and your sandwich is ready.
