Baked potatoes with cheese and cream

Ingredients:

  • 1.2 kg. potatoes, peel and cut into thin slices
  • 1 cup grated sharp cheese Cheddar
  • 1/3 cup finely grated Parmesan cheese
  • 1 shallot, finely chopped
  • 4 cloves garlic, chopped
  • 1 tbsp flour
  • Salt and freshly ground pepper
  • 3 cups (10%) light cream
  • 1-2 tsp smoked paprika
  • 3 tbsp (45 g) butter

Preparation:

  1. Preheat oven to 180 C. Grease a baking dish with 1 tablespoon of butter.
  2. Melt 2 tablespoons of butter in a skillet. Add the shallots and garlic, cover, and cook until softened, 3-4 minutes. Stir in the flour and cook until golden, about 2 minutes. Season with salt and pepper, pour in the cream, stirring constantly, then add the smoked paprika and potatoes. Simmer for 5 minutes.
  3. Place half the potatoes in a single layer in a baking dish and sprinkle with half of each cheese. Then add another layer of potatoes and sprinkle with the remaining cheese. Cover the dish with foil and bake for 60 minutes. Fifteen minutes before the end of the cooking time, remove the foil and continue baking until golden brown.
