- 2.5 tbsp heavy cream
- 1/4 tbsp. (60 g.) softened mascarpone cheese
- 1 tbsp. sugar
- 1/4 tsp vanilla extract
- 3 tbsp amaretto or other almond liqueur
- 1/4 cup very strong coffee or espresso, chilled
- 4 sticks savoyardi (Italian ladyfingers), cut each in half
- 1 tbsp unsweetened cocoa powder + extra for garnish
- Amaretti cookies, broken into pieces, for decoration
Preparation:
- Whip the cream in a bowl with a hand mixer until stiff peaks form. Refrigerate.
- In a large bowl, combine the mascarpone, sugar, vanilla, and 1.5 tablespoons of amaretto using a spatula or wooden spoon. Fold in the whipped cream and set aside.
- Pour the coffee and the remaining 1 1/2 tablespoons amaretto into a shallow bowl and set aside.
- Dip 2 savoiardi halves into the coffee mixture and place them in the bottom of a 120 ml (4 oz) ramekin. Top with a small dollop of mascarpone cream, sprinkle with cocoa powder, and repeat the layers of soaked biscuit halves, cream, and cocoa powder. Assemble the dessert in the other ramekin in the same way, cover with plastic wrap, and refrigerate for a few hours to set.
