Ingredients:
- 1 large egg
- 1 cup leftovers chicken parmesan, cut into cubes
- 0.5 tbsp. grated parmesan
- 16 pieces of wonton dough
- Warm marinara sauce or chicken broth, for serving
Preparation:
- Bring a large saucepan of water to a boil and add salt.
- Meanwhile, in a small bowl, whisk together the egg and 2 tablespoons of cold water. In another bowl, combine the chicken and 1/4 cup of Parmesan cheese.
- Place a piece of dough on a work surface and top with 1 tablespoon of chicken filling. Lightly brush the edges of the dough with beaten egg. Fold the dough in half to cover the filling and pinch the edges to seal. Assemble the remaining dumplings in the same manner.
- Cook the dumplings in boiling water until they float to the surface, 2-3 minutes. Serve with warm marinara sauce for dipping or in bowls of warm chicken broth for soup. Sprinkle with the remaining 1/4 cup Parmesan.
