Fried turkey sausages with sweet peppers

Ingredients:

  • 550 g lean sausages for frying ground turkey
  • 2 tbsp. extra virgin olive oil
  • 3 sweet peppers of different colors, cut into thin strips
  • 1 head of fennel, trimmed and finely chopped
  • 1 large onion, cut into strips
  • Coarse salt
  • 3 crushed cloves of garlic
  • 1 teaspoon chopped fresh rosemary
  • 1/2 tsp dried pepper flakes
  • 1/2 tsp fennel seeds (optional)
  • 420 g canned tomatoes without added salt, diced
  • 12 crushed leaves basilica and a little more for sprinkling

Preparation:

  1. Preheat the grill. Prick the sausages all over with a fork, place them on a baking sheet, and grill for about 8 minutes, until golden brown. Be sure to flip them halfway through. Transfer to a cutting board and cut diagonally.
  2. Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the bell pepper, fennel, and onion and cook, stirring, for 3 minutes, until the vegetables are slightly softened.

    Add 1/2 teaspoon salt, garlic, rosemary, pepper flakes, and fennel seeds. Cook, stirring, for another 1 minute.
  3. Add 1/2 cup water, tomatoes, and basil, and stir. Reduce heat to medium, cover, and cook for another 5 minutes, until the vegetables are completely softened. Remove the lid, add the sausages, and cook for another 3-4 minutes. (Add a little water if the sauce becomes too thick.) Sprinkle with basil.
