Waldorf Salad with Apple Dressing topcook.tomathouse.com
Ingredients:
For couscous:
- 1 tbsp safflower oil or grapeseed oil
- 1/2 cup whole wheat couscous
- Coarse salt
For salad dressing:
- 1/4 cup cider vinegar or apple wine
- 1 tbsp. honey
- Coarse salt and freshly ground black pepper
- 1/3 cup safflower oil or grapeseed oil
For the salad:
- 6 outer leaves from a large head of radicchio
- 1 small head of fennel, cut into 0.5-1.2 cm pieces.
- 1 cup green seedless grapes, halved
- 3/4 cup toasted walnuts
- 1 large Gala apple, without core, cut into 0.5-1.2 cm cubes.
Preparation:
- Prepare couscous: Heat oil in a large saucepan over medium-high heat. Add couscous and fry for 4 minutes until golden brown.
Add 3/4 cup water and 1/4 teaspoon salt and bring to a boil. Reduce heat to a simmer, cover, and cook for 10 minutes, until the liquid is absorbed. Remove the lid, set the pan aside, and let cool.
- Prepare the dressing: In a small bowl, whisk together vinegar, honey, 1.5 teaspoons salt, 1/4 teaspoon black pepper, and oil.
- Prepare the salad: In a large bowl, combine the apples, fennel, grapes, walnuts, and couscous. Drizzle with the dressing and toss well to coat the salad.
- Place 1 radicchio leaf on each plate. Then arrange the salad among the leaves.
