Ingredients:
- 1 sheet (250g) frozen puff pastry, thawed
- 2 cups grated semi-skimmed mozzarella (220 g)
- 110 g thin slices of salami, cut into bite-sized pieces
- 60 gr. pepperoni slices
- 1/4 cup grated Parmesan cheese, plus extra for sprinkling
- 5 tbsp. simple breadcrumbs
- 2 large eggs, beaten in separate cups
- 2 tbsp pickled banana peppers, coarsely chopped
- 0.5 tsp dried oregano + extra for sprinkling
- A pinch of red pepper flakes, plus extra for sprinkling
- Premium flour for working with dough
- 1 cup prepared pizza sauce, for dipping
- Special equipment: pizza stone or baking sheet
Preparation:
- Place a rack on the bottom shelf of the oven, place a pizza stone or baking sheet on it, and preheat to 190°C (375°F). Line another baking sheet with parchment paper.
- In a medium bowl, combine and press together the mozzarella, salami, pepperoni, Parmesan, 4 tablespoons bread crumbs, 1 egg, banana pepper, oregano, 1/4 teaspoon salt, and red pepper flakes; set aside.
- Dust a work surface with flour and lay out a sheet of puff pastry. Roll it out into a rectangle measuring 22 x 37.5 cm. Transfer the dough to the prepared baking sheet.
- Sprinkle the remaining 1 tablespoon of breadcrumbs lengthwise down the center of the dough. Spoon the cheese mixture over the breadcrumbs and press firmly, leaving a 2.5 cm border on each short end and approximately 7.5 cm border on each long side. Fold the short sides of the dough over the filling. Using kitchen scissors, cut the dough on both sides of the filling into 2.5 cm-wide strips, stopping 1 cm from the filling. This should create a fringe-like appearance.
- Brush the dough over the entire surface with the remaining beaten egg. Starting at one short end, fold the strips alternately, slightly diagonally, over the filling to create a braid-like pattern. The filling should be mostly covered by the dough, but some will peek out from between the strips.
- Grasp both ends of the roll and form it into a horseshoe shape. Brush the top and sides of the dough with beaten egg. Sprinkle with oregano, red pepper flakes, and Parmesan cheese.
- Place the baking sheet with the roll on a preheated baking sheet and bake until golden brown, 40-45 minutes.
- Meanwhile, heat up pizza sauceUsing a serrated knife, cut the roll into pieces. Serve with warm dipping sauce.
