Dan-dan instant noodles

Ingredients:

  • 3 x 85g packages of instant noodles (no seasoning packets needed)
  • 4 tablespoons of vegetable oil
  • 220 g of minced pork
  • 1 tbsp. grated peeled ginger root
  • 6 tablespoons lightly salted soy sauce
  • 1/3 cup chopped canned cucumbers + 6 tbsp. brine
  • 2 tablespoons hot sesame oil

Preparation:

  1. Bring a large pot of water to a boil. Cook the noodles according to package directions. Drain and rinse thoroughly under cold water. Drain again and set aside.
  2. In a large skillet, heat 2 tablespoons vegetable oil over high heat until shimmering. Add the ground pork and 2 teaspoons ginger and cook, breaking up the ground pork with a wooden spoon, until lightly browned, about 3 minutes. Add 2 tablespoons soy sauce, chopped pickles, 3 tablespoons brine, and 1/4 cup water. Cook, scraping up any browned bits from the bottom of the pan, until the pork begins to brown again, about 4 minutes. Remove from heat.
  3. In a large bowl, combine 1/4 cup water with the remaining 4 tablespoons soy sauce, 3 tablespoons brine, 2 tablespoons vegetable oil, hot sesame oil, and the remaining 1 teaspoon ginger. Add the noodles and toss to coat evenly. Top with the pork, toss, and serve immediately.
