Quinoa, Grape, and Avocado Salad

Ingredients:

  • 4 cups cooked quinoa, cooled
  • Juice and zest of 1 lime
  • 3 tbsp. l. olive oil
  • 2 cups white grapes, halved
  • 1.5 cups diced cucumbers
  • 0.5 cup fresh mint, coarsely chopped
  • 0.5 cup fresh parsley, coarsely chopped
  • 4 green onions, white and light green parts, chopped
  • 1 avocado, diced

Preparation:

  1. In a large bowl, combine the lime zest and juice with olive oil. Taste and season with salt and pepper.
  2. Combine quinoa, grapes, cucumbers, mint, parsley, onion, and avocado and drizzle with dressing. Serve chilled with grilled lobster.
