Ingredients:
- 1 whole grain English muffin, cut in half on the side
- 1 small tomato, seeded and diced
- 1 teaspoon olive oil
- 1 thin slice (15 g) Canadian bacon (smoked brisket), diced
- 1/4 tbsp. grated mozzarella
- Chopped basil for serving
Preparation:
- Preheat oven to 230°C. Line a small baking sheet with foil.
- Place English muffin halves cut-side up on a baking sheet. Top with tomatoes and drizzle with olive oil. Top with Canadian bacon and mozzarella. Bake for 10-12 minutes, or until the cheese is melted and starting to brown. Sprinkle with basil.
