Sweet Potatoes with Pecan Streusel and Marshmallows topcook.tomathouse.com
Ingredients:
- 12 large sweet potatoes
- 165 g of butter at room temperature
- 3/4 cup brown sugar
- 3/4 cup flour
- 1/4 tsp ground cinnamon
- 1/4 teaspoon salt
- 1 cup toasted pecan pieces
- 1 tbsp. mini marshmallows
Preparation:
- Preheat oven to 200°C.
- Wash the sweet potatoes, scrubbing them thoroughly to remove any dirt. Use a fork to prick each potato a couple of times and place them on a baking sheet. Bake for about 45 minutes, or until a knife inserts easily.
- In a large bowl, combine the butter, brown sugar, and flour until crumbly. Add the cinnamon, salt, pecans, and marshmallows; stir the streusel to combine.
- Cut a slit down the center of the sweet potato and push the ends toward the center to open it up. Fill the sweet potato with a generous amount of streusel and return it to the oven. Bake for another 20 minutes or until the topping is toasted and bubbling.
