Ingredients:
- 1/4 cup chopped pecans
- 3/4 tbsp. + 2 tbsp. l. brown sugar
- 0.5 tsp ground cinnamon
- 1 cup premium flour
- 1 cup whole grain flour for baking grade II (with a gluten content of 8-10%)
- 1 teaspoon baking soda
- 0.5 tsp fine salt
- 1/4 cup canola oil
- 2 large eggs
- 1 tbsp. applesauce (puree)
- 1 tsp vanilla extract
- 3/4 cup reduced-fat sour milk
- 1 Golden Delicious apple, peeled, cored and cut into 0.5cm pieces.
Preparation:
- Preheat oven to 200°C. Spray a 12-cup muffin tin with cooking spray.
- In a small bowl, combine the nuts, 2 tablespoons of brown sugar, and cinnamon. In a medium bowl, whisk together the flours, baking soda, and salt.
In a large bowl, whisk together the remaining 3/4 cup sugar and vegetable oil. Add the eggs one at a time, beating well after each addition. Then fold in the applesauce and vanilla.
- Stir in the flour in 2 additions, alternating with the sour milk. Mix the dough. Carefully fold in the apple pieces.
- Pour the batter into the prepared muffin pan and sprinkle with the nut mixture. Tap the pan a few times on the counter to release any air bubbles. Bake the muffins until a wooden toothpick inserted into the center comes out clean, 20 to 25 minutes.
- Cool on a wire rack for 15 minutes. Then, run a knife between the sides of the pan and the muffins to loosen them and remove them. Cool the muffins completely on a wire rack.
