Onion rings in cornmeal

Ingredients:

  • 2 large onions
  • 2 cups of sour milk or kefir
  • 1.5 cups of wheat flour
  • 1/4 cup corn flour
  • 1 liter of vegetable oil

Preparation:

  1. Peel the onion, cut into 1.2-2 cm thick slices and separate into rings. In a medium bowl, mix sour milk, 1.5 tsp. salt, and 1 tsp. pepper. Add the onion rings, mix thoroughly, and let marinate for at least 15 minutes. In a separate bowl, mix both types of flour, 1 tsp. salt, and 0.5 tsp. pepper.
  2. When you're ready to fry the onion rings, preheat the oven to 200°F (93°C). Line a baking sheet with paper towels.
  3. Heat oil in a large saucepan or wok to 175°C. Remove the onions from the sour milk mixture in batches and coat them in the flour mixture. Add them to the hot oil and fry for 2 minutes, until golden brown. Using tongs, flip the rings once during frying. Don't add too many at once!
  4. Place the cooked onion rings on a baking sheet, season generously with salt, and place them in the oven to keep warm while you prepare the next batch. Continue frying and transferring them to the preheated oven until all the onion rings are fully fried. They will remain crispy in the oven for up to 30 minutes. Serve hot.
