Cookies with chocolate filling

Ingredients:

  • 1/3 cup heavy cream
  • 200 g dark chocolate, chopped into small pieces
  • 3/4 cup sugar
  • 500 gr. shortbread cookie dough

Preparation:

  1. Place a small saucepan over medium heat. Pour in the cream and heat until almost boiling (about 3 minutes). Turn off the heat and add the chocolate. Stir for 1-2 minutes, until the chocolate melts. Pour the mixture into a small bowl. Let the chocolate cool and thicken enough to roll into balls.
  2. When the chocolate has hardened, preheat the oven to 180°C.
  3. Pour the sugar into an empty pie pan. Roll the chocolate into teaspoon-sized balls and set aside. Form a walnut-sized lump of cookie dough into a thin rope about 8 cm long. Place the chocolate ball on the work surface and wrap the rope around it.
  4. Press the dough into the chocolate filling. The resulting shape should resemble the planet Saturn. Roll the cookies in sugar until completely coated. Place on a large baking sheet. Continue forming the remaining cookies and rolling them in sugar. Once all the balls are on the baking sheet, press them down to a thickness of about 0.6 cm using the bottom of a glass.
  5. Bake the cookies for 15 minutes. Transfer to a wire rack to cool, then serve.
