topcook.tomathouse.com

Ingredients:

  • 350 gr. soft tofu, drain the liquid
  • 85 g dark chocolate, finely chopped
  • 0.25 cup cocoa powder
  • 0.25 cups of water
  • 1 tbsp brandy
  • 0.5 cup plus 0.5 teaspoon fine sugar
  • 0.25 cups heavy cream
  • 1.25 tsp chocolate chips

Preparation:

  1. Puree the tofu in a blender or food processor until smooth.
  2. Combine the chopped chocolate, cocoa powder, 0.25 cups of water, and brandy in a saucepan or heatproof bowl and place over a double boiler. Heat, stirring frequently, until melted and smooth. Remove from heat. Add 0.5 cups of sugar a little at a time and stir until smooth.
  3. Add the chocolate mixture to the tofu and blend until smooth. Spoon the mousse into serving bowls, cover, and refrigerate for at least 1 hour.
  4. Whip the cream with a whisk. When the cream is almost completely whipped, add the remaining 0.5 teaspoon of sugar and finish whipping. Garnish each serving with a dollop of whipped cream and chocolate shavings, and serve.
