Granola bars

Ingredients:

  • 230 g of oatmeal
  • 40 g of sunflower seeds
  • 90 g almonds, sliced
  • 40 g of wheat germ
  • 170 g of honey
  • 50 gr. brown sugar
  • 25 g butter, plus extra for greasing
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 190 g dried fruit: dried apricots, dried cherries or blueberries

Preparation:

  1. Grease a 22 x 22 cm glass baking dish and set aside. Preheat oven to 180°C.
  2. Spread the oats, seeds, almonds, and wheat germ on a rimmed baking sheet. Place in the oven and toast for 15 minutes, stirring occasionally.
  3. Meanwhile, in a medium saucepan, combine the honey, brown sugar, butter, vanilla, and salt over medium heat. Cook until the sugar is completely dissolved.
  4. When the oat mixture is ready, remove it from the oven and reduce the temperature to 150°C (300°F). Immediately add the oat mixture to the liquid mixture, add the dried fruit, and mix well. Pour the mixture into the prepared pan and press down to distribute evenly. Bake for 25 minutes. Remove from the oven and let cool completely. Cut the granola into squares and store in an airtight container for up to a week.
