Ingredients:
- 1 kg of diced turkey meat
- 1/2 cup chopped garlic
- 6 tsp chili powder
- 4 tbsp paprika
- 2 tsp cayenne pepper
- 2 tsp ground cumin
- 2 teaspoons of salt
- 1 teaspoon crushed red pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon ground black pepper
- 2 tsp onion powder
- 1/2 tsp garlic powder
- Additionally: smoking chips
Preparation:
- Place the turkey in a large bowl. In a smaller bowl, combine the remaining ingredients and mix thoroughly. Add the seasoning mixture to the turkey. Mix thoroughly. Cover and refrigerate for 24 hours.
- Grind the meat twice in a meat grinder. You can also use a food processor for this. Stuff half of the mixture into sausage casings to form 15-cm strands. Form the remaining meat into three patties, each weighing 250 grams. You can make the sausages pre-cooked and freeze them, or serve them smoked immediately.
- Light the grill and add damp wood chips to the drip tray. Place the sausages on the grate, close the grill, and smoke for 10–15 minutes.
