Baked salmon with nut sauce topcook.tomathouse.com
Ingredients:
- 1 kg salmon fillet
- 1/2 cup walnuts
- Pinch cayenne pepper
- 1 tbsp fresh lemon juice
- 1 teaspoon of honey
- 2 tbsp diced roasted sweet pepper
- 1 tbsp. l. nut butter
- 2 tbsp. l. olive oil
- 1/4 cup chopped fresh parsley
- Salt and freshly ground pepper
- 2 tbsp. sliced green onions
- 1 tsp grated lemon zest
Preparation:
- To prepare the sauce: Preheat oven to 180°C (350°F). Toast the walnuts on a baking sheet for 7-10 minutes. Cool, then chop finely and place in a bowl. Add cayenne pepper, lemon juice, honey, bell pepper, nut oil, 1 tablespoon olive oil, and 2 tablespoons parsley. Add ½ teaspoon of salt, season with pepper, and toss to combine. Cover and refrigerate.
- To prepare salmon: Increase the oven temperature to 220°C (425°F). In another bowl, combine the remaining olive oil, 2 tablespoons of parsley, green onions, lemon zest, 1/2 teaspoon of salt, and pepper. Rub the salmon with this mixture. Place in a baking dish, skin side down, and bake until done, about 15-20 minutes. Remove from the oven and place on a rack for 5 minutes, then transfer to a serving platter and top with the nut sauce.
