Homemade Spice Baking Mix topcook.tomathouse.com
Ingredients:
Dry ingredients
- 1 and 1/4 cups premium wheat flour
- 1 cup brown sugar
- 2 tablespoons cornstarch
- 2 tsp baking powder
- 1/4 teaspoon salt
- 1/2 tsp ground ginger
- 2 teaspoons pumpkin pie spice*
Wet ingredients
- 1/2 cup whole milk
- 2 eggs at room temperature
- 1 teaspoon vanilla
- 1/2 cup (120 g) butter, room temperature
Preparation:
- Sift all dry ingredients into a bowl. If there are any large lumps, break them up or remove them. Place the flour mixture in an airtight storage container or a gift jar and fold in the chocolate chips and/or spices.
Note *
If you don't have pumpkin pie spice, you can use: 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon allspice, and 1/4 teaspoon cloves.
Using a baking mix In a medium bowl, add eggs, milk, and vanilla and mix with a fork. Set aside.
Using a mixer, beat the butter.
With the mixer on low power, add the dry mixture and eggs in small portions, one at a time.
- Bake the cake in a 20 cm diameter pan at 180°C for approximately 18 minutes. Increase the time to 30 minutes if baking in a larger pan and keep a close eye on the cake.
This recipe makes 14-16 cupcakes (mini muffins) and should bake for about 15 minutes.
