Punch "Bubbling Cauldron"

Ingredients:

  • 3/4 cup frozen limeade concentrate (about half of a 12-ounce jar), thawed (see recipe below)
  • 3 cans (350 ml) ginger beer, chilled
  • 1 cup coconut rum or vodka (optional)
  • 500 ml. green tea-flavored ice cream

Preparation:

  1. In a punch bowl, combine limeade concentrate, 3 1/2 cups cold water and 1 can ginger beerAdd rum, if using.
  2. Spoon green tea ice cream into the punch. Top with 2 more cans of ginger beer to create a foamy topping.

    Homemade Limeade Concentrate: Heat 1/2 cup sugar and 1/4 cup water in a saucepan until the sugar dissolves. Let cool for 10 minutes. Add 1/3 cup lime juice. You can store this concentrate in the freezer for up to 6 months.
