Spicy Glazed Nuts with Bacon topcook.tomathouse.com
Ingredients:
- 250g (8 to 9 slices) applewood-smoked bacon, cut into 3cm pieces.
- 1 large egg white
- 1/4 teaspoon salt
- 1/3 cup sugar
- 140 g raw almonds
- 110 g walnuts, coarsely chopped
- 1/4 tsp cayenne pepper
Preparation:
- Preheat the oven to 350 degrees Fahrenheit (160 degrees Celsius). Cook the bacon in a large skillet over medium heat until browned, 8 to 9 minutes. Remove the bacon with a slotted spoon and drain the fat on paper towels. Pour 1/4 cup of the bacon fat onto a baking sheet with olive oil and spread it evenly.
- Whisk the egg white and salt in a medium bowl until foamy. Gradually add the sugar and whisk until combined. Add the almonds, walnuts, and cayenne pepper. Stir until the nuts are well combined.
- Spread the nut mixture in a single layer on a baking sheet. Bake until the nuts are crisp and browned, about 35 minutes, turning and stirring the nut mixture with a metal spatula every 10-15 minutes. Let cool for 2 hours, while you prepare a hot beverage, such as tea.
- Transfer the nut mixture to a bowl; fold in the bacon pieces. This recipe can be made up to 1 day ahead and stored in an airtight container in the refrigerator.
