Ingredients:
Shashlik
- 450-600 g trimmed pork tenderloin or loin, cut into 24 3 cm cubes.
- 450 g of chilled smoked bacon, one piece
- 2 tsp Italian seasoning
- 1 tbsp granulated garlic
- 1 teaspoon paprika
- 2 teaspoons coarse salt
- 1 teaspoon ground black pepper
- Canola oil for grilling
- Orange honey mustard sauce for serving, recipe follows
- You will need: six wooden skewers, 20 cm long.
Marinade
- 1 cup coarse salt
- 0.5 cups of sugar
- 2 bay leaves
- 4 sprigs of thyme
- 3 crushed garlic cloves
- 4 tbsp. ice cubes
Orange Honey Mustard Sauce
- 1 tbsp. l. olive oil
- 1 small shallot, finely chopped
- 1 cup orange juice
- 2 tablespoons of honey
- 0.25 cups country mustard
Preparation:
- For the marinadeCombine the salt, sugar, bay leaf, thyme, and garlic in a saucepan with 2 cups of water. Bring to a boil, and once dissolved, remove from heat. Add ice cubes to cool, and set aside.
- For porkPlace the sliced pork in the cooled marinade and refrigerate for 45 minutes. Meanwhile, cut the bacon into 6 1/2-inch-thick pieces, weighing approximately 1/4 lb (70 g) each.
Place a large pot of cold water over high heat and add the bacon slices. Bring to a boil, then reduce the heat and simmer for 5 minutes.
- In a small bowl, combine Italian seasoning, granulated garlic, paprika, salt, and pepper. Remove the pork from the brine and pat dry with paper towels. Thread bacon and a piece of pork onto each skewer.
Wrap the bacon around a piece of pork in an "S" shape and continue threading the bacon and pork onto the skewer. Each skewer should have four pieces of pork and one thick strip of bacon. Sprinkle everything with the seasoning mixture.
- Preheat the grill to medium and brush the grates with oil. Place the kebabs on the grill and cook for 3-4 minutes on each side until the bacon is crispy on the edges and the pork is medium-soft. Spread the orange sauce over the grilled pieces.

Orange Honey Mustard SauceHeat the oil in a small saucepan over medium heat. Add the shallots and sauté until soft. Add the orange juice, honey, and mustard, and mix thoroughly. Bring to a boil and reduce the heat for 8-10 minutes. Stir well, remove from heat, and keep warm.
Note
Chilled bacon is easier to cut. You can boil it before frying, which will render out some of the fat. It will also be partially cooked and will be sure to crisp up nicely on the grill..
