Chicken with quinoa and curry

Ingredients:

  • 1/2 cup cooked, coarsely chopped chicken
  • 1/4 cup chopped red onion
  • 1/2 cup shredded carrots
  • 1/2 cup chopped celery
  • 1 teaspoon olive oil
  • 1/2 cup quinoa
  • 1/2 tsp curry powder
  • 1/4 tsp ground turmeric
  • You can add chopped fresh cilantro if desired.

Preparation:

  1. In a large bowl, combine the onion, carrot, celery, and oil. Microwave until the vegetables are tender, 1 to 2 minutes.

    Add the chicken, quinoa, curry powder, turmeric, salt to taste, and microwave until cooked through, another 1-2 minutes. Sprinkle with cilantro, if desired.
