Pork cutlets on the bone with sauce

Ingredients:

  • 4 bone-in pork chops (about 2.5 cm thick)
  • Coarse salt
  • 1/2 teaspoon Cajun seasoning without salt
  • 3/4 cup wheat flour
  • 2 tbsp. l. olive oil
  • 1 tbsp (15 g) butter
  • 1 large onion, cut into rings
  • 1 tbsp fresh thyme, chopped
  • 1.5 cups lightly salted chicken broth
  • 2/3 cup kefir

Preparation:

  1. Rub the pork with salt and Cajun seasoningPlace flour in a shallow bowl. Dredge the pork in the flour and shake off any excess.
  2. Heat olive oil in a large skillet over medium-high heat. Add the meat and cook for 2-3 minutes per side. Transfer to a serving platter.
  3. Add butter, onion, thyme, and a pinch of salt to the skillet. Cook, stirring occasionally, until golden brown, 8 to 10 minutes. Add 2 tablespoons flour and cook, stirring, for 1 minute. Pour in the chicken broth, bring to a boil, and cook for about 2 minutes.
  4. Add kefir and meat to the pan. Bring to a boil and simmer over low heat until the sauce thickens, 10-12 minutes. Serve the pork chops on the bone with lemon cookies.
