Flatbreads with feta cheese dipping sauce topcook.tomathouse.com
Ingredients:
- 450 g crumbled feta cheese
- 12 green onions with heads (grill the green parts and chop them, slice the heads into thin rings for garnish)
- 1/4 cup olive oil, plus more for frying the flatbreads
- 2 tablespoons fresh lemon juice
- 2 tsp finely chopped lemon zest
- Salt and ground black pepper
- 2 cloves of garlic
- 8 pita bread
Preparation:
- Place the grilled onion, oil, lemon juice, and zest in a food processor and process until smooth. Add the feta cheese and garlic and process again until smooth. Transfer the mixture to a bowl and garnish with chopped green onions.
- Preheat the grill to high. Brush the pitas with the remaining oil and season with salt and pepper to taste. Grill for about a minute on each side, until lightly golden brown. Remove from the grill and cut each pita into 8 wedges. Serve with cheese dipping sauce.
