Horiatiki Greek Salad Tapas

Ingredients:

  • 3 ripe tomatoes, diced
  • 1 thinly sliced ​​red onion
  • 1/2 seedless European cucumber, finely chopped
  • 1 small red bell pepper, seeded and diced
  • 1 small green bell pepper, seeded and diced
  • 1 Cubanelle pepper, seeded and diced
  • 1 cup olives
  • A few sprigs of fresh parsley (about 1/2 cup)
  • 2 slices (110 g) feta cheese
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano (broken in the palm of your hand)
  • Coarse salt and black pepper
  • Pita flatbreads

Preparation:

  1. In a large bowl, combine the vegetables, olives, and parsley. Place slices of feta cheese on top of the salad.
  2. In a small plastic container with a lid, combine the oil, vinegar, and oregano. Shake vigorously to combine the oil and vinegar, and drizzle the dressing over the salad and cheese. Season with salt and pepper, and let the salad marinate until serving. Serve with grilled pita breads until puffed and warm.
