Rocky Road Marshmallow Bars

Ingredients:

  • 280 g semi-sweet chocolate, broken into pieces
  • 110 g plus 1 tbsp softened butter
  • 3 tablespoons light molasses or 1/4 cup corn syrup
  • 225 g of plain hard and crispy cookies
  • 2 cups mini marshmallows in different colors
  • 2 teaspoons powdered sugar

Preparation:

  1. In a heavy-bottomed saucepan, melt the butter, chocolate, and syrup. Set aside about 1/2 cup of this melted mixture.

    Place the cookies in a freezer bag and crush them with a rolling pin. You should have crumbs and cookie pieces.

    Stir the cookie pieces and crumbs into the melted chocolate mixture, then fold in the marshmallows.
  2. Pour the mixture into a 9-inch (23 cm) square aluminum pan. Smooth it out as best as possible with a spatula. Top with the remaining 1/2 cup of melted chocolate mixture.

    Place in the refrigerator for 2 hours or overnight.

    Cut the set mixture into 24 rectangles and dust with powdered sugar through a tea or small strainer.

    You can bake brownie under a layer of marshmallows and chopped chocolate to create a marshmallow crust.
