Ingredients:
- 1 heaping cup of white rice
- 4 boneless, skinless chicken breasts
- 4 boneless, skinless chicken thighs
- 1 cup chicken broth or water
- 1 ripe pineapple
- 1 tbsp (15 g) butter
- 1 teaspoon salt (to taste)
- Peeled and chopped ginger root, 2.5 cm long.
- Vegetable oil
- Salt and ground black pepper
- 2 tablespoons black sesame seeds (can be substituted with toasted white seeds), plus 1 tablespoon toasted sesame seeds
- 1/4 cup honey
- 1/2 cup teriyaki sauce
- 4 thinly sliced green onions
- 2 tbsp of water
Preparation:
- Heat a grill pan or large skillet over medium-high heat.
Bring a small saucepan with a lid to a boil. Add the butter, salt, and rice. Bring the water back to a boil. Reduce the heat to low and cover the pan with a lid. Simmer for 18 minutes and remove the rice from the heat. Uncover and let the rice cool slightly.
Form the rice into balls using an ice cream scoop and your hands. If the rice is sticky, wet your hands with water. Place the rice balls on a plate and sprinkle with black sesame seeds.
- While the rice is cooking, bring the chicken broth to a boil, adding the ginger. Add the honey. Once the honey has dissolved, add the teriyaki sauce and sesame oil. Reduce the heat to low.
- Meanwhile, cook the chicken in honey teriyaki sauce. Brush the chicken with a little oil, season with salt and pepper. Place it on a hot grill and grill for 6 minutes on one side.
Flip the chicken and generously brush with honey teriyaki sauce using a pastry brush. Cook for 4 minutes, flip again, and generously brush with more sauce, then cook for another 2 minutes. Transfer the chicken to a plate. Sprinkle with chopped green onions.
- While the chicken is frying on the other side, peel and cut a ripe pineapple into 8 pieces. To do this, cut off the top and bottom of the pineapple.
Stand the pineapple upright and cut the skin off in strips, top to bottom. Cut in half lengthwise, then quarter each half lengthwise. The core is edible, but you can remove it if you prefer. Pineapple can be very sour. Soak the slices in cold water for a minute to prevent the juice from stinging your lips when you eat the pineapple.
Serve with chicken and rice balls.
