Blueberry Loose Cake with Sponge Cake Mix

Ingredients:

  • Two 350g bags of frozen berries
  • 1 package (250 g) yellow sponge cake mix
  • 1/3 cup finely chopped walnuts
  • 1/3 cup oatmeal
  • 110 g (8 tbsp) melted unsalted butter
  • Cooking spray or butter to grease the pan
  • Ice cream or whipped cream, for serving

Preparation:

  1. Preheat oven to 350°F (175°C). Spray a 9 x 13-inch baking dish with cooking spray or grease with butter.
  2. Place the berries in the prepared pan. Sprinkle the cake mixture evenly over the berries. Sprinkle with walnuts and oats. Drizzle evenly with butter.
  3. Bake until golden brown and firm, about 55 minutes. Let rest for 5 minutes. Serve with ice cream or whipped cream.
