Pork loin with pineapple salsa topcook.tomathouse.com
Ingredients:
- 4 bone-in pork loins (1.2 cm thick, approximately 800 g)
- Pinch pepper flakes
- 1 cup long-grain white rice
- 1 pineapple, peeled, quartered lengthwise, core removed
- 1 tbsp. chopped peeled ginger
- 1 tbsp. vegetable oil
- 1 tbsp soy sauce, plus a little extra for salsa
- 1/2 teaspoon Chinese 5-spice seasoning
- 1 bunch of green onions
Preparation:
- In a medium saucepan, combine the rice with 1 2/3 cups of water and bring to a boil. Cover, reduce heat to low, and simmer for about 15 minutes, until the water is absorbed and the rice is tender. Remove from heat and set aside.
- Meanwhile, cut a 5 cm (2 in) piece of pineapple and coarsely grate it into a large bowl. Add the ginger, vegetable oil, 1 tablespoon of soy sauce, and 1/4 teaspoon of five-spice seasoning. Add the green onions and pork. Coat them thoroughly with the mixture and let marinate for 10 minutes. Grate the remaining pineapple with the remaining 1/4 teaspoon of five-spice seasoning.
- Preheat the grill to medium-high heat. Grill the pork for 3 minutes on each side, until cooked through. Grill the pineapple and green onions for 3 minutes, turning occasionally, until lightly charred.
- Chop the pineapple and green onions into large chunks and place in a bowl. Add red pepper flakes and a splash of soy sauce and stir. Serve the pork loin with rice and pineapple salsa.
