Double-decker burgers with turkey patties and pickles

Ingredients:

    Burgers

  • 0.8 kg ground turkey
  • 2 tablespoons mayonnaise
  • Rapeseed oil, for frying
  • 8 slices American cheese
  • 4 potato buns, cut horizontally in half

    Spicy mayonnaise

  • 1/4 cup mayonnaise
  • A little marinade from the cucumbers
  • 1 - 1.5 tbsp. Sriracha hot sauce

    Pickles

  • 1 large pickle, cut into 1/4-inch pieces (about 1/2 cup)
  • 1 tbsp. grainy mustard

Preparation:

  1. Spicy mayonnaise:

    Combine the mayonnaise and marinade in a small bowl. Add the Sriracha sauce, a little at a time, to taste.

    Combine pickles and grainy mustard.
  2. Cutlets:

    Place the ground meat in a large bowl and spread it over the entire bottom and slightly up the sides. This will help evenly distribute the seasoning throughout the ground meat. Sprinkle generously with salt and black pepper. Stir in the mayonnaise.
  3. Taste test: take a tiny piece of ground meat and form it into a patty. Place a small frying pan over medium heat, add a little vegetable oil, and fry the patty on both sides. Let it cool slightly and taste. If more salt and pepper are needed, add them to the raw mixture. Taste again if necessary.
  4. Form the minced meat into 8 equal patties (100 g each) by rolling them into balls. Place the balls on a clean surface and gently flatten them to a thickness of 2 cm and a diameter of 5-7 cm. Alternatively, use a round patty mold. Make an indentation in the center of each patty (as the meat cooks, the center will expand; the indentation will help maintain a uniform thickness).
  5. Preheat oven to 190°C.
  6. Heat a large cast-iron skillet over high heat and add just enough canola oil to coat the bottom. When the oil begins to smoke lightly, add the patties in a single layer, spaced slightly apart. Cook in batches if necessary. Press the patties down with a metal spatula to ensure they are thin enough to handle and cook without moving them until the edges are browned, 2-3 minutes. Flip with a spatula and place a slice of cheese on top of each patty to melt. Cook until desired doneness, another 3-5 minutes.
  7. Place the bun halves on a baking sheet and toast in the oven until golden brown, 3-5 minutes. Spoon hot mayonnaise onto the bottom halves, but do not spread it. Top with a patty, then pickles, hot mayonnaise, and another patty. Finish with pickles, hot mayonnaise, and the top buns. Serve immediately.
