Turkey, Avocado, and Romaine Lettuce Club Sandwiches topcook.tomathouse.com
Ingredients:
- 350 g of cooked and smoked turkey breast meat (sliced)
- 1/3 cup thinly sliced red onion
- 2 tablespoons apple cider vinegar
- 8 slices of bacon
- 1 avocado (preferably Hass variety), cut in half and remove the pit
- 1/2 cup low-fat natural yogurt
- Coarse salt and freshly ground pepper
- 8 slices whole grain bread, toasted
- 8 small leaves romaine lettuce
- 1 tomato, cut into 8 slices
- 1/2 small English cucumber, sliced
Preparation:
- Soak red onion in 2 tablespoons apple cider vinegar and 2 tablespoons water for 15 minutes, drain.
Meanwhile, fry the bacon until crispy.
- In a small bowl, mash the avocado with the yogurt until smooth; season with salt and pepper.
- Place the bread on a cutting board and divide half of the yogurt-avocado mixture among 4 slices. Top with romaine lettuce and tomato slices; season with salt and pepper. Add the turkey, fried bacon, cucumber, and pickled red onion. Spread the remaining bread slices with the yogurt-avocado spread and sandwich. Cut each sandwich in half before serving.
