Ingredients:
- 4 cups premium flour
- 1 tbsp. sugar
- 2 teaspoons coarse salt
- 1 and 1/4 teaspoons active dry yeast
- 1.5 cups hot water (about 38°C)
- 1/3 tbsp. + 2 tbsp. l. olive oil
Preparation:
- In a stand mixer fitted with a dough hook, combine the flour, sugar, salt, and yeast. Mix the hot water and 2 tablespoons of olive oil, then add to the mixer on low speed and mix until a loose ball forms. (You can also do this by hand: combine the dry ingredients in a large bowl. Make a well in the center, then add the water and oil and mix with a wooden spoon.)
- Knead the dough with a mixer on medium speed until smooth and slightly sticky, about 7 minutes. (If kneading by hand, form the dough into a ball, then transfer it to a work surface and knead, flouring your hands and the surface, until the dough is smooth and slightly sticky, about 5 minutes.)
- Pour the remaining 1/3 cup olive oil into a 11 x 17-inch baking pan. Place the dough on the pan and coat it with oil. Cover loosely with plastic wrap and let rise in a warm place until the dough fills about two-thirds of the pan, about 1 1/2 to 2 hours.
