Oven-baked hash with fried eggs

Ingredients:

  • 3 potatoes (approximately 550 - 650 g)
  • 2 tbsp (30 g) butter
  • 230 g cooked sausage, cut into cubes about 1.5 cm in size (approximately 2 cups)
  • 1 large sweet onion, diced
  • 1/2 tsp caraway or dill seeds
  • 8 large eggs
  • Coarse salt and freshly ground pepper
  • 2 tbsp chopped fresh parsley
  • 2 feathers green onions, cut into rings

Preparation:

  1. Preheat oven to 200°C. Prick the potatoes several times with a fork. Microwave for 10 minutes, turning halfway through, until just cooked through. Let the potatoes cool slightly, then peel and cut into 1.5 cm cubes.
  2. Heat oil in a large cast-iron skillet over medium-high heat. Add the sausage and cook gently for 3 minutes. Add the onion and cumin and continue cooking until the onion is softened, about 3 more minutes.
  3. Stir in the potatoes, then smooth the mixture evenly over the bottom of the pan, pressing lightly with a spatula. Cook the hash over medium heat until crispy on the bottom, about 5 minutes. Flip and continue cooking for another 5 minutes. Remove from heat.
  4. Using a spoon, make 4 wells in the mixture and crack 2 eggs into each well. Place the hash in the oven and bake until the egg whites are set, about 10 minutes. Season with salt, pepper, and sprinkle with parsley and green onions.
