Pizza Flavored Tacos

Ingredients:

  • 2 tbsp. l. olive oil
  • 110 g of mushrooms, thinly sliced
  • 220 g raw sweet Italian sausage (preferably without fennel), casings removed
  • 60 g thin slices pepperoni sausage, halved (about 1/2 cup)
  • 1/4 teaspoon dried oregano
  • 1 cup tomato pizza sauce
  • 8 corn tortillas
  • 1 tbsp. grated mozzarella
  • 0.5 cup ricotta
  • 1/4 cup thinly sliced ​​fresh basil leaves

Preparation:

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the mushrooms and cook, undisturbed, until browned on one side, then stir and continue cooking until browned on the other side, about 3 minutes. Transfer to a plate.
  2. Reduce heat to medium and add the remaining 1 tablespoon olive oil to the skillet. Add the sausage and cook, breaking it up with a wooden spoon, until darkened, 3 to 5 minutes. Add the pepperoni and oregano and cook until the pepperoni is crispy around the edges, about 1 minute. Add tomato sauce for pizza and the reserved fried mushrooms. Bring to a boil and cook for another 5 minutes.
  3. Heat the tortillas according to package directions. Divide the meat mixture among the tortillas. Sprinkle with grated mozzarella, ricotta, and basil.
