Heirloom Tomato Chow Chow Relish

Ingredients:

  • 0.9 kg of firm, non-hybrid tomatoes (different varieties and colors), cut into large pieces
  • 4 cups apple cider vinegar
  • 1 cup of sugar
  • 2.5 cm of grated ginger root
  • 1 tbsp mustard powder
  • 1 tbsp turmeric
  • 3 tablespoons mustard seeds
  • 3 tablespoons celery seeds
  • 1.5 tbsp. pickling seasoning
  • 2 medium onions, chopped

Preparation:

  1. In a large saucepan, combine vinegar, sugar, ginger, dry mustard, turmeric, mustard seeds, celery seeds, seasoning for pickles and 1 teaspoon of salt. Bring to a boil over high heat, then reduce heat and simmer for 15 minutes to allow the spices to release their aromas.
  2. Increase the heat again; once the mixture reaches a vigorous boil, add the tomatoes and onions, stirring to coat evenly. Reduce the heat and simmer for 5 minutes. Remove from heat and cool to room temperature.
