Heirloom Tomato Chow Chow Relish topcook.tomathouse.com
Ingredients:
- 0.9 kg of firm, non-hybrid tomatoes (different varieties and colors), cut into large pieces
- 4 cups apple cider vinegar
- 1 cup of sugar
- 2.5 cm of grated ginger root
- 1 tbsp mustard powder
- 1 tbsp turmeric
- 3 tablespoons mustard seeds
- 3 tablespoons celery seeds
- 1.5 tbsp. pickling seasoning
- 2 medium onions, chopped
Preparation:
- In a large saucepan, combine vinegar, sugar, ginger, dry mustard, turmeric, mustard seeds, celery seeds, seasoning for pickles and 1 teaspoon of salt. Bring to a boil over high heat, then reduce heat and simmer for 15 minutes to allow the spices to release their aromas.
- Increase the heat again; once the mixture reaches a vigorous boil, add the tomatoes and onions, stirring to coat evenly. Reduce the heat and simmer for 5 minutes. Remove from heat and cool to room temperature.
