Grilled Fruit Skewers with Chili and Lime topcook.tomathouse.com
Ingredients:
- Half a seedless watermelon weighing 2.2 - 2.5 kg, cut into 2.5 cm cubes.
- 1 pineapple, peeled, cored and cut into 2.5cm cubes.
- 2 mangoes, peeled, pitted and cut into 2.5cm cubes.
- Grated zest and juice of 1 lime
- Vegetable oil for greasing
- 2 tsp chili powder
- Coarse sea salt
Preparation:
- Soak 18 wooden skewers in water for 20 minutes. Then thread cubes of watermelon, pineapple, and mango onto them.
- Place the skewers in a large zip-lock plastic bag, being careful not to puncture it. Add lime juice, seal, and gently toss to coat all the skewers. Refrigerate for at least 30 minutes or until ready to use.
- Preheat a grill or grill pan over medium-high heat. Remove the skewers from the bag and place them on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until grill marks appear, 6-8 minutes. Transfer to a serving platter.
- In a small bowl, combine lime zest, chili powder and 1 teaspoon of salt. Sprinkle the fried fruit with the seasoning.
