Ingredients:
- 12 smoked almonds
- 12 pitted prunes
- 24 freeze-dried raspberries
- 60 g dark or semi-sweet chocolate, chopped
Preparation:
- Insert a whole almond into the pit of each prune. Close the prune so that the almonds are inside (it's okay if some are sticking out). Place the prunes on a waxed paper-lined baking sheet and refrigerate for 30 minutes.
- Place the raspberries in a sealable plastic bag and crush them into a fine powder. Pour the powder into a small, shallow bowl.
- Place the chocolate in a small microwave-safe bowl. Microwave at 70% power for 1 minute. Remove from the microwave; the chocolate will still look firm, but will be softer to the touch. Stir until smooth.
- Dip one end of a prune into the chocolate, letting any excess drip back into the bowl, and then roll the chocolate end in crushed raspberries to seal. Place the prune back on the baking sheet with the almond-side down and repeat with the remaining prunes. Let sit for about 15 minutes, until the chocolate has set.
