Grilled strawberry skewers with lemon-mint sauce

Ingredients:

  • 24 ripe medium strawberries, hulled (about 0.7 kg)
  • 1 tbsp. vegetable oil
  • 4 tablespoons maple syrup
  • 1/4 cup mint leaves, torn
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons lemon juice
  • Special equipment: 8 wooden skewers, 25 cm each, soaked in water for at least 15 minutes

Preparation:

  1. Preheat the grill or grill pan to medium-high heat and clean the grates by scrubbing them with a brush.
  2. While the grill is preheating, thread the strawberries onto skewers, piercing each strawberry with two skewers to make four skewers with six strawberries each (using two skewers will make them easier to turn). In a bowl, combine vegetable oil and 2 tablespoons of maple syrup. Brush the strawberries with the mixture.
  3. In a small bowl, combine mint, lemon zest and juice, and the remaining 2 tablespoons maple syrup.
  4. Grill the strawberries until tender and grill marks appear, 3-4 minutes per side. Serve drizzled with lemon-mint sauce.
